There should be a report added to the system that records the amount of items that were added to slips and then removed.
there should also be a report where we can see how many orders where deleted
and a last report that would show how many items had price modifications
each report ...

Your CHIT number can also be set as the customers name.
You can then go under ORDERS section and see the listing of the table and chit number (Customers name) along with what the current tab it
You can then select that and it will take you to the customers bill
