There are services like DynDNS that will assign a unique address to one of your computers (the one connected to the internet with the PUBLIC IP)and will make the updates as needed if your IP changes so you can access your computer using that unique address. You don't have to setup all the computers ...

Your ISP may have a VPN solution for you, for a fee of course, but they will provide with the hardware, software, config and support and of course the "security".
I know AT&T does, I use their VPN service called: "FastConnect" to login to my hotel PMS when I travel.

Yes: you can move your DB to the "shared docs" folder on your host computer and have all the networked computers (including your kitchen) log in using that DB.
